PSC Professor Tom Sydow to once again serve as Celebrity Chef
‘Wycktoberfest,’ as it has been termed, is upon us and Tom Sydow, an English professor at Potomac State College of West Virginia University, will once again serve as the Celebrity Chef at the Candlewyck Inn and Restaurant in Keyser, W.Va. on Saturday, October 29.
The menu for the night includes a choice of appetizers: Beer Cheese Soup with bacon, Candied Kielbasa with German mustard or Reuben eggrolls.
Probable main courses will include 1) Jaegerschnitzel (veal) with Jaegerwyck sauce, a blend of bacon, mushrooms, onions, Riesling, German mustard, sour cream, and thyme; 2) Pan Fried Trout with a pan sauce of Riesling, brown butter, red onions, cream, and thyme; 3) Artisan sausage sampler with sauerkraut; 4) Grilled Pork Sirloin Chop marinated in Schwartzbier, molasses, and brown sugar; 5) Beef Roulade; and 6) Chicken Paprikash in a red pepper/mushroom/paprika sauce on spaetzel.
Side choices will include broccoli, roasted red potatoes, Brussel sprouts, cheddar mashed potatoes, warm German potato salad, or braised red cabbage. A delectable choice of desserts will be available as well.
A portion of the evening’s profits will be donated to Relay for Life in memory of the late Chef Thomas. “I have many fond memories of cooking with Chef Thomas and learned valuable cooking tips from him,” said Sydow, adding “I’m also thrilled that Fred and Sharon have invited me back to serve as a guest chef again this year.”
In addition to teaching writing, literature, popular culture, and humanities at the College, Sydow also teaches a community class on beer brewing and wine making with colleague Professor Donna Ballard.
